Roasting deli vegan potato salad

I purchased a container of vegan potato salad from our local co-op yesterday and was going to serve it with dinner last night. Unfortunately it was way undercooked. One could hardly cut into the potato with a fork and knife. Not to want to waste food or drive across town to return I threw the entire container on a roasting pan and put in a 350 degree oven for 25 minutes. It came out absolutely wonderful. A nice crisp brown potato with a delightful coarse mustard and veganaise coating, creamy on the inside with bits of roasted red peppers, green onion and celery....my new secret dish and I am not going to share with anyone but you ;-}
