Lime - oncello????

We have a lime tree that is still full of fruit (Coastal SoCal) but it's looking like the last 75 or so limes are going to all mature around the same time. I love Limoncello and have seen a few recipes that suggest it can be duplicated with limes. Is this a good idea? Is there anything I should change in the basic recipe to compensate? How different is the finished product?

    1. basically you make it the same way as with lemons, BUT you have to make sure you get only the green zest and hardly any white pith because the pith in limes is much more bitter than in lemons.

          get out the good out microplane zester and it should be no problem
