Best street-food

I am in NY for 3 days and want to try the new cool/upscale street food experience. What are the newest (or most classic) street food vendors ? Which ones I should not miss ? I will eat pretty much any type of food.

PS Schnitzel Truck just had a fire, so not sure how long they'll be out of commission.

Thanks for the links, although I had seen that NYMag from 2007.
Also, thanks for the info. I was wondering what had happened to Schnitzel and Things. I was on my way there when I saw the tweet about the "mishap"
Instead, tried the Biryani Cart for late lunch (46 st 6 ave). Fantastic kati rolls.
Tomorrow, where should I have breakfast ?
