The only aufschnitt I've ever seen for sale in Brooklyn was packaged, from I think Montreal. If some store is making their own, I've never heard of it. Who makes it in Baltimore, and will they ship?

Wasserman and Lemberger makes it. They're an old-school yekke butcher. I'm not a big aufschnitt fan, but other people tell me theirs is great. Don't know about their shipping policies.

Just out of curiosity, what IS aufschnitt?

it is a German layered kosher (in our case) deli meat loaf.

I'm pretty sure it is available at Glatt Mart (Ave M, in Brooklyn).

What I used to see referred to as aufschnitt was a variety of different lunch meats/cold cuts rather than any one specific kind. Pepper loaf/pimento loaf, pickle loaf and olive loaf would be examples of kinds of aufschnitt.

In German, "Aufschnitt" just means "cold cuts". But in Jewish America, at least, it means a specific kind of cold cut which is rarer than it used to be.
