Matuba lunch buffet in Bethesda
The raw fish was extremely fresh. The tempura light and flaky and piping hot. Teryaki chicken was moist with a nice char taste, and not overwhelmed by the sauce. The maki rolls contained plenty of fresh, juicy avocado. Salad and fruit added a nice way to begin and end the meal. Good times.

Based on the buffet menu listed on the website, that's a pretty limited selection for a buffet.

I enjoyed the freshness of the salmon and tuna, and the fact that the tempura and teryaki were brought straight from the kitchen to the rotary buffet. Some buffets let the tempura sit on a steam table and it gets rock hard. I have been to buffets that had good sushi, but the tempura and teryaki are IMO better at Matubi than other simlar buffets that I have frequented.

I also recently discovered Matuba's rotary sushi buffet. It's not a huge selection of sushi, but it's a great price for AYCE and the fish is very fresh.
The chef also puts the dishes out on different sides of the rotary belt, so one group of people don't cherry pick every dish as its hits the belt -- very helpful!
The salad wasn't at all interesting to me, but the gyoza and other hot treats that kept coming out of the kitchen were greatly appreciated. I loved the spicy rolls and the maguro. For $18 a head (we went for dinner) it was fantastic! We were both really satisfied.
Only thing I will note is that if you only like maki - you will be eating a lot of Cali rolls, spicy tuna rolls and hot gyoza! They serve about 50/50 maki-nigiri
