        <content>My husband is baking his way through "Baking Illlustrated" and is making all the recipes - in order. Now that he's in the chapter about fruit pies, this is somewhat of an issue, as a lot of fruits are now out of season. We were able to use frozen rhubarb and frozen berries for some pies, but the next one call for FRESH peaches (and personally, I hate canned peaches, so that suits me just fine). Is there any way that we could find those in Montreal next week (imported from God knows where)? Or should we just forget it and make the pie next summer?

      <content>For many, many reasons, I'd suggest passing that recipe over until Quebec is once again producing its very fine peaches.</content>

      <content>There's no such thing as a Quebec peach, not a commercial one anyway. We don't have the weather for it. The closest peach producing region is the Niagara valley in Ontario. But I'll agree with the gist of your comment. Forget about using out of season peaches (if there even are such things), it's hard enough finding good ones during peach season.</content>
