Grilled Pineapple with Cinnamon Sugar?

Hello All,

I recently visited a Brazillian steakhouse, you know, the type where they serve you grilled meats carved tableside.

Putting aside the medicore meat, they served a grilled pineapple that was done whole on a spit and coated in a cinnamon sugar type mixture.

I suspect the pineapple was grilled before the sugar was applied as there was no carmelization. Plus the pineapple was unusally juicy and moist so I thought it might be marinated in something.

Is anyone familiar with how to make something like this?

    1. I ate my weight in that pineapple at a similar Brazilian steakhouse! I agree, meat was mediocre, but man, I waved over the pineapple guy every time I saw him! Really good. I would love to know how it was done too.

Haven't had that but something that may be as good, if not better, is to slice the pineapple into 1/2-in. rounds, dunk in coconut milk, then dredge in turbinado sugar (rough crystals that will resist burning best), maybe with some cinnamon added, then grill both sides, it will be mighty fine. It also will have the sugar on the entire surface of the slice, rather than just the outside. You might just put a scoop of vanilla ice cream on top of that lovely round pineapple slice...
