I've been looking for sun dried stockfish for quite some time. Growing up, it was a favorite that my Sicilian Mother made in several ways. The last time I bought it had to be a couple of decades ago. I'm feeling the need again and I'm willing to travel to get it. My sister even tracked down a distributor who imported it from Norway but he wouldn't sell it to her. I know there's plenty of dried cod around, but it's just not the same flavor or texture once rehydrated. Anyone?

Thanks,
JoJo

Just to clarify the OP's request to avoid unresponsive replies: this is not for salt cod or baccala, but for stockfish or stoccafisso, which is not salted. Stockfish is the more ancient form of preserved cod.

Have you talked to the folks at Salumeria Italiana in the North End? They may know where to get it or they may be able to order it.

I tried both Salumeria Italiana and J Pace. Pace said they sold it up to about 2 years ago when it was priced at $46/lb and stopped carrying it because of the steep price. I may be out of luck.

Thanks anyway,

It is possible to get some sun dried fish in the area, as Prav mentions its popular in West African cusine, its also big in El Salvador (during lent Salvadoran markets are stocked to the gills with sun dried fish, but not usually cod although I did see it once at La Internacional), some Caribbean markets. Ordering on line as Karl S might be an option (http://stockfish.us/, but I don't know anything about them), in general you might have more options around Lent. Since they are both mostly Scandinavian products, it might be worth a call to a fish market which orders a lot of salt cod from importers (such as Courthouse) just to see if its something they can get.
