Went to the Union Square farmer's market today and it wasn't there...last week was the final one for the season. So I walked over to Sherman's Market...kind of new storefront near the Sherman's bakery/cafe to look for parsnips. Found parsnips as well as frozen leaf lard from PT Farm in St. Johnsbury, VT. 1.56 pounds for $4.80. They specialize in NE farm and other products, have a nice selection of cheeses, vegs, honey, meats, ice cream, etc. A bit pricey but all seems very high quality. A nice touch...they sell fresh herbs at very reasonable prices by weight so you don't end up with more than you can use.

The highest grade of lard, known as leaf lard, is obtained from the "flare" visceral fat deposit surrounding the kidneys and inside the loin. Leaf lard has little pork flavor, making it ideal for use in baked goods, where it is treasured for its ability to produce flaky, moist pie crusts. ... Wikipedia
