I wonder if he's going to do any of his molecular gastronomy stuff--that would be quite a departure for Town Hall.

Morales is listed on the website as Chef de Cuisine. A bit ago, he was working in Texas. When I spoke to him in the last days of Winterland, he said he was thinking about something Nicaraguan. It will be interesting to see how he's expressing himself at Town Hall.
