My wonderful philipino stepmother gave me a ton of frozen lumpia filling. She gave me spring roll wrappers also, but I was wondering if anyone had any other interesting dishes I could use lumpia filling in?
Preferably non-fried dishes? :-)

Curious, do you know what she puts in her filling? I tried re-creating some from my childhood (they were a staple of our Christmas market at school), and came pretty close. Does she include raisins?

No raisins, but I will BBM her and ask what she puts in. As far as I can tell I think there's a little shredded carrot and some onion. Lemme get back to you on that.

An idea for how to use the filling---form into meatballs and either bake and serve those over sesame noodle salad, or simmer in chicken broth with some bok choy, carrots, etc.
