The only place I've been on Thanksgiving is Hyeholde; it was good. http://www.hyeholde.com/ You might want to get a res in the older area of the building rather than the more generic Round Room. They will ask which one you want when you call and if you make an earlier res they will remind you that your table will be re-seated after 2 hours. $39 each, kinda pricey but quality food.

There are a number of other places that will be open, but not too terribly many. The Post-Gazette should be publishing a list, perhaps as soon as tomorrow. Hotel restaurants are usually open, and there are a few others consistently open. Wherever they decide, make sure to have them make a reservation ASAP to have best choice of times.

This is LAST YEAR'S P-G list: http://www.post-gazette.com/pg/08318/927306-242.stm

Le Pommier, McCormick & Schmick's and UUBU 6 are among places that have been typically open (but we don't have an updated list for this year, keep in mind) and would have a non-buffet menu and generally also choices that are not typical Thanksgiving fare. Grand Concourse is an interesting setting but expect a ZOO there at the buffet, always popular for T-day. Other places open are mostly those connected to hotels.

(Interesting, links below are automatic for things it knows, neat.)

Have to say, I think that's the first mention I've ever seen of this place, Thanksgiving or otherwise. Interesting, thanks.
