Orlando's New Mexican Cafe is hard to beat for traditional southwestern (Great red & green chile). 1114 Don Juan Valdez Ln Taos, NM 87571 (575) 751-1450 I am also a big fan of Taos Pizza Outback--their green chile pizza is to die for. www.taospizzaoutback.com

El Meze out near the Old Blinking Light. Outstanding tapas. We also like the bar at the El Monte resort. Great buffalo and sometimes yak burgers and chili.

Antonio's has reopened a sit-down restaurant east of the plaza where the ??? Supper Club used to be. I've had two dynamite dinners there. Graham's Grill is consistently excellent. I refuse to got to the Anaconda Bar at El Monte anymore because the service at my last visit (2 weeks ago) was atrocious bordering on total neglect. For bar food and a nice atmosphere, I prefer Sabroso in Arroyo Seco. No bison, but the burger was great.
I'll give a hearty second to Orlando's, my favorite place in Taos. Also, the newly (no so much now) reconstituted Lamberts is also excellent.
