        <content>This place used to be fantastic, even as recently as 4 years ago. What happened? I was surprised when, after we ordered, they delivered a house salad to the table. Plain, normal salad with vinaigrette. At a New Mexican place?  Why?

The chile relleno was a surprise. It didn't have any filler. Just a chile with batter. "Relleno" means stuffed, so one would think they'd stuff it with. . .Something.

The carne adovada, which I had been looking forward to as you can't find it anywhere outside of NM, was tough, dry, and lacked spice. The posole was merely passable. 

Even the sopapillas were screwed up. Limp lumps of rubbery dough.

Perhaps the regular chef had the day off, but from this outing, it seems the restaurant has gone downhill, in a very big way.

      <content>Dumb article. A house salad can't be served at a New Mexican restaurant? The unique dressing is very popular among the area. El Paragua serves great food, do not be pursuaded by this article</content>
