Keeping rice wine

Hello,

How do you keep/store Chinese rice wine (Shao Xing wine)?

Should I store it in the refrigerator?

Or just in a cool dry place (like in the kitchen cupboard).

  1. I store it in the kitchen cupboard, and I live in a sub-tropical climate - it keeps fine.

    1. Mine is in the cupboard next to soy sauce, vinegars and oils.

      1. Chinese rice wine is an extremely resilient alcohol. If it's cooking wine, then I'm sure that a kitchen cupboard is fine, as the Chinese cooking wine (many that are also from Shaoxing) is loaded with salt, and they use their youngest/worst (Matured less than 1 year) wines for that stuff. If it's a drinking-quality rice wine then once you open the bottle, I recommend you keep it in the refrigerator to keep the fresh taste.
