To toast or not to toast

ChristinaMason Oct 23, 2009 03:08 AM

I'm serving some mini egg salad sandwiches for tea/coffee today. Do you think I need to halve and toast the mini croissants before spreading on the egg salad? Will the bread be soggy if I don't, even if I assemble them right before serving? I realize lettuce is the obvious fix, but I don't want to go to the store again.

    I wouldn't toast a croissant.

An old trick on pre-made sandwiches is to butter the bread before you put the other ingredients on it. I am not sure how this would work with croissants, but it works on other sandwiches.

I worked for a caterer once and she toasted all buns and croissants and often breads for sandwiches to make them sturdier but popped them into bags after toasting (paper for cold, plastic for the warmer) for that little bit of steam to keep the texture right. I still do this at home and I think the sandwiches hold up and taste much better.
