One day I made lunch for the staff and used a cheese found in the walk in that I had never had. It was called Cantal and became my favorite cheese. Years past. I forget the name and have not cooked professionally for almost 20 years. Suddenly it came to mind last year and I inquired about it at Olympic Cheese on Woodbine in Markham. Yes, they have it and I find myself returning week after week, buying $20 wedges of this complex, buttery and rich cheese. Now I don't work in Markham anymore and proceeded to visit The Cheese Boutique off the South Kingsway last Monday. I pay the same or slightly more for a crusty rind cheese with none of the character of the previous purchases. It was rubbery and much lighter in colour. Off to Olympic's booth at the Saint Lawrence Market yesterday to be curtly informed that they don't have any and are unsure if the Markham location has any, despite me seeing a large piece last week. At the other end of the market I enquire about Cantal. "We have a young one..." The taste offered is good. And I buy a 15 wedge. It was clearly more aged, but lacked the rind of my previous purchases. As a somewhat naive cheese buyer can you hounds help me out?
