mixed grill inspiration
Im cooking supper tonight for guests from out of town. They've requested side dishes of bacon wrapped green bean bundles, and roasted cauliflower, and that the main be grilled. We had a grilled seafood feast last night, so probably no fish. Im up for anything, just nothing seems to be jumping out at me. I'd like to do a mixed grill, simply because its special that there are guests, and I'd like people to have options. I live in San Diego, and have most things available to me.
I like GHG's suggestions. Kind of funny how your guests are requesting certain sides - are they your specialities? Must be good friends!
How about a mixed grill of hot Italian sausages, bone in chicken breasts and racks of lamb? If you can marinate or at least dry brine the chicken ahead of time, that would be best, but don't let that deter you. You can sear the lamb racks & chicken on direct first, then move over to indirect, and then cook the sausages over the fire, while the lamb & chicken continue to cook on the cool side. And cut lemons are delicious over the fire as well and make a pretty garnish.
Then I would serve it all with a salsa verde. You can get many different types on the web, depending upon your taste and what you find at the market. My favorite is a chimichurri sauce. Have lots of crusty grilled bread for it too. Have fun!
