Tripe and kidney can be hard to find in BR but it is available from time to time. And, as I say, I have tried to get them for parties occasionally and had to look a couple of spots before finding them..now I just load up in new Orleans beforehand. I ended up buying a grocery store hock because I couldn't find a good meat market. In my opinion, the hocks you use make a huge difference in the beans. You could check with Babineau's over in Henderson/Cecelia..and maybe Bergeron's in Port Allen, which of course is closer to you.
