Rosemary skewers - do I need to wet them?
I have rosemary growing in my garden and I want to use it as skewers for lamb. Do I need to wet them so the exposed parts won't burn on the grill - maybe just wet the exposed ends??
Even if you wet them they'll burn to some degree. But the burned smokey rosemary flavor isn't at all a bad thing. If you want to keep the exposed parts of your skewers intact on an open grill you'll need to make certain the exposed wood is not confronted by open flame or high heat or use something other than wood.
