Green Papaya Deli (Oakland) - where's the chef?

yummyrice Oct 18, 2009 04:37 PM

I heard through the grapevine that the chef responsible for making most of the wonderful Lao salads (long bean salad, papaya salad, larb,etc...) at Green Papaya Deli in Oakland is no longer working there. Can anyone confirm this rumor? I'm definitely going to miss his long bean salad...it was so delicious.

Green Papaya Deli is one of the better Lao restaurants so I hope that same guy is still working in the kitchen.

Went last Saturday, but could not figure the chef issue out (some language problems). Food still pretty tasty, though. Long bean salad was excellent. The menu seems a little bit bigger--they are offering Nam Kao, Grilled Beef Steak with sour spicy sauce or bitter spicy sauce (my favorite), several different varieties of papaya salad, raw beef salad, beef soup.

Also something called ORC Beef or Chicken (Ground rice, green onion, dill, lemon grass, onion, green lettuce)--what is that?

If they have the fried rice crackers packed in plastic bags in the newspaper bin, get them. Mildly sweet, crunchy toasty, and not rancid/synthetic tasting.

Thanks for the update. I'm glad the food is still pretty tasty.

ORC Beef or Chicken? hmmmmm I have no clue what that is. Perhaps ORC is referring to a Luang Prabang (northern Lao) stew called Or Lam / Aw Lam? But then why would they put green lettuce in the stew? Anyway, Or Lam is very fragrant and rich in flavor.

Here's a photo of "Or Lam":
