A Savory Bread Pudding with seafood????

I love a great bread pudding, in fact CH has a great mushroom and fennel bread pudding. I love seafood even more - anyone combine the two?? I bet an oyster bread pudding would be great but I shrimp even more. I had a garlic bread pudding at a restaurant and fell in love with savory bread puddings. Anyone have any favorites, particularly with seafood??

    Oyster bread pudding sounds almost like oyster turkey stuffing so the same ingredients would work. I'll check out that mushroom and fennel bread pudding. My husband LOVES any kind of bread pudding. I saw Ina make one with panetonne that looked great.

      Wolfgang Puck has a great Oyster Suffing recipe that we make religiously every year (comes up on google). It usually comes out a little bit more like bread pudding than stuffing (in my mind at least), especially if you don't REALLY REALLY squeeze the spinach dry. I've found the best way to do the spinach is to wring it out in a clean tea towel (one that you don't mind if it turns green). I highly recommend this recipe - it is amazing.

      Roasted Garlic, caramelized onions, tasso, corn, shrimp, and cornbread pudding. mmmmmm

        You might look up Portuguese a├žorda recipes, they are essentially bread puddings/soups made with seafood and quite delicious. Previous discussion on CH: http://chowhound.chow.com/topics/363676

          My sister and I made a lobster strata for Christmas breakfast last year. It involved gruyere, maybe gouda (IIRC), chives, challah. The family really enjoyed it.

            This is not with seafood, but I saw this in Nov's Bon Appetit mag today and thought of this post. Butternut squash and cheddar bread pudding. It looks wonderful, and it's a recipe for a vegetarian Thanksgiving spread, but I think I may make it anyway!!! It uses a baguette, Tuscan kale, which I love. Plus I'm always looking for new ways to use butternut squash. My kids may even eat this one!! If anyone wants the recipe, let me know, & I'll type it out.

              I love oyster bread pudding but, as a side for seafood, I think it's a bit too much like the main dish to work very well. A seafood side with a seafood main just doesn't contrast as well as I believe it should. I'd suggest something on the order of a spinach/mushroom/cheese bread pudding (jack cheese, perhaps) and I'd build it on a sourdough bread foundation.
