"swamp mustard" on smoked mullet .... mmmmm good!

i just got back from s.w. florida, where i spent some time with my outdoorsman nephew. we went mullet fishing in charlotte harbor, and caught 25. as a treat for me, he smoked a few of those mullet, using a new-to-me product: "swamp mustard." boy, was it good.

i didn't know he'd smoked the mullet with anything on them, but when i took a bite, it was a little sweet, a teeny bit hot, and a tiny bit tangy. what a great foil for the mullet. i really recommend this swamp mustard. (btw, if you catch mullet (which i learned is a "bloody fish"), to get the whitest meat, break the mullet's neck right there when you catch it, and rinse the mullet there in the water. clean it as usual when you get home).

later on in the trip, i also was happy to use the swamp mustard as a condiment with a roast ham, of all things. it made a fine sauce to eat on the ham, as well as to nestle up against some southern potato salad.

my nephew also loves the "gator sprinkles" which is a meat rub/seasoning.

we have no link to this company, other than enjoying their products. i think swamp mustard would be great on bratwurst or salumi, and also as a component in sauces or salads where mustard is used. it'd be good blended with mayo or sour cream for a nice roast beef spread, too. i know it'd be good for deviled eggs. i think smoked turkey would also be nice with the swamp mustard sauce -- maybe especially if blended well with a tart cranberry preserve.

i'm favorably inclined to get a sampler myself, to check out the other products. anyone that uses guava in his mustard has got a good thing going!

  1. On Christmas, I had the swamp mustard with fried wild turkey and it was really tasty.

    When I was down in Florida, I was going to go over to Felda to get some of their products, but realized it'd be a bad idea since I had to fly back to DC. I will order some this year, and will include the hot sauce, which my nephew says is quite delicious, too. I have to find out WHICH hot sauce he loves...on the other hand, the sampler pack may be the best idea.
