cheese + shortening for topping?
hi chowsers,
I am making cupcakes and I am wondering whether combining cheese (mascarpone or cream cheese) with (veg.) shortening will make a good/tasty topping and can hold for several hours.

No, it would not be a very good topping. I'd just use cream cheese and some sugar. Let it stand for a little while, to let the sugar dissolve, and it's going to be very nice.

Use either the cream cheese (my vote) or the shortening (will not need to be in the fridge) with powdered sugar. I'm sure there are a few frosting recipes here on Chow that will work.
