Herbed goat cheese and whole wheat challah, brunch ideas?

I have some herbed goat cheese from trader joes, the kind with the herbs mixed in. I also have lots of whole wheat challah. I'm in charge of making brunch tomorrow for 5 adults and one child, any recipe ideas? All ingredients are ok except for pork. I'm in the middle of packing and my brain is just dead at the moment trying to think of something. I thought of some sort of bread pudding but don't have the energy to research recipes, so any and all ideas are much, much appreciated. Thank you!

    How about adding the herbed goat cheese to scrambled eggs and lightly toast the challah or make eggs & traditional challah french toast with syrup & jam

        HiilJ, we're always on the same page :) i was going to suggest a goat cheese frittata and traditional French toast.

              Sorry I have been moving and it has been a little crazy. At the last minute I found the roast beef hash I had been searching months for, so I changed the menu to include that, french toast, and a great arugula salad with tahini dressing. I did end up using the goat cheese for these little toasts spread with the goat cheese and some pears I had caramelized in butter, thyme salt and pepper, they were yummy!
