I'm looking for a Las Vegas (preferably Strip) buffet that emphasizes burgers, pizza, Mexican food, Italian food and similar fare, instead of a high-end buffets that cater to fancier tastes. Any suggestions?

Just about all the buffets in the strip properties have different "stations" that feature various world cuisines. The Carnival Buffet at the Rio is a good expample as well as the buffets at the M Resort and Mandalay Bay. We're particularly fond of the buffet at the M Resort. All have everything you mentioned plus more.

Paris has a good overall buffet, so does South Point, Mandalay Bay, Bellagio, Harrah's, MGM Grand. I like Sams' Town (Boulder HWY), Red Rock (West of Strip), and Gold Coast (PALMS neigbor)

In terms of what the OP is suggesting, the RIO is definitely what you're looking for. That isn't to say it is good, but it has "Americanized" food in plethoric amounts.

I agree, Rio would be my first choice. They would definitely have the best selection of what you are looking for. I think they are better quality wise than Southpoint or Orleans.

Never seen burgers at an LV buffet. If a buffet had a "burger station", i.e. made-to-order, add-your-own-toppings, that would be great. However, burgers sitting on a steam table, well, that doesn't sound good at all.

Nope, not at all. It's an interesting concept, but not sure if it would be a major draw for any Vegas buffet.
