I have a pumpkin and am looking for a recipe which uses fresh pumpkin. What is your favorite recipe which uses fresh pumpkin?

Roasted and served over rice with some plain yogurt.

This sounds *very* good. I would add just a bit of cardamom.

      Hi Shorty,

Here's a link to a pumpkin pie recipe I posted a while back that uses fresh pumpkin and coconut milk.

Thanks a lot for the links. Do you find that baking the pumpkin yields a better tasking pumpkin puree vs steaming the pumpkin?

it really depends on how you're using it. but for a simple preparation where you're not doing too much to it, i do prefer to bake or roast as i think it enhances/deepens the natural sweetness.

Can pumpkin soup be frozen? My husband said he prefers canned pumpkin for pumpkin pie vs fresh pumpkin. It sounds like he does not really like fresh pumpkin. I'll try making soup and see if he likes it any better.

you can absolutely freeze the soup. you can also bake and chop or puree the flesh and freeze it for future use if you don't want to make the soup right now.
