Chewy oatmeal cookie/bar recipe?
Hey guys - I'm planning on making ice cream sandwiches this weekend using chewy oatmeal cookies on the outside (Ideally, I'l like to recreate It's-It sandwiches, or come as close to it as possible). Also I'd love to bake a big bar that I could cut out shapes from (to make use of ice cream sandwich molds). Anyone have a good recipe that'd be appropriate?

Funny - that's the recipe I usually use, and it's awesome.
Thinking about it, though, I realized what I'm looking to do is to make a cookie similar to the cookie part of Little Debbie Oatmeal Creme Pies. Anyone have any thoughts/suggestions? I'll try poking around the internet for that as well, see what I can dig up.
