Help! Roasting pan with completely flat bottom suitable for glass top stoves
It feels like I've searched high and low for a stainless steel (not non-stick) roasting pan that has a completely flat bottom that I can safely use on my glass top stove. My understanding is that even a small ridge can cause heat to build up in the air pocket with risk of the glass cracking.
The closest I can find is the All Clad flared pans sold at Williams-Sonoma. It is nearly completely flat, but with a very slight ridge I'm nervous about purchasing it (plus the $375 Canadian price tag is a bit steep!). Does anyone have any experience using this on a glass-top stove?
My friend purchased an Aubecq pan at Winners that fits the bill, so I will search their stores, although the merchandise is so hit and miss.
Any and all suggestions are welcome (although pans that can be easily sourced in Toronto would be a bonus)!
