Zucchini Bread help

Making Silver palate recipe. Should I pack the shredded zucchini for the required 2 cups?

    That's the recipe I use as well. You'll be good with the lightly packed amount. I never measure the zucchini very precisely anyway and it always comes out well. Everyone who tries that bread loves it, even those who swear they hate zucchini bread.

      Good to hear because I think over baked it. Recipe said 1 hour and 15 minutes but at one hour and 5 minutes it was a little drier than I like.
      I had another question about the recipe. The first ingredient listed is "one and 1/2 tablespoons of butter PLUS extra for buttering the pan" but the recipe never mentions the one and 1/2 tablespoons butter so I left it out.
      I'm hoping to make this a regular and want to try it again.

      not familiar with that recipe. When I make my zuke bread I pack the zuke lightly.

        Thanks - That's exactly what I did. It's still cooling but looks good.
