Looking for some good eats in Hong Kong. Where are the locals eating?

Could be a hole in the wall, could be a locals place, could be high end/well known chef (although not really necessary)....just looking for tasty food!

HK has probably the highest concentration of restaurants on earth. In some areas there are practically wall to wall restaurants and on top of each other. Where do locals eat? Everywhere. Eating out is the life blood of HK residents. There are discussions on high end dining here. But I think it's pretty impossible to talk about hole in the wall dining because they are everywhere. And as a friend of mine says, you can walk into just about any restaurant in HK and get at least a competent meal.
