In Culver City on Sepulveda, you might try Sorrento's Market. They make pretty good sandwiches which include (as I recall) a decent veal parm sandwhich.

Eastside Market makes a great eggplant parm sandwich.

To withstand the steamy sandwich environment, veal parmesan needs to be slightly overfried, compared to the entree version, before baking with cheese and tomato sauce. I do that at home but don't know of any place in LA that's worth the trouble. I would have suggested Neil's, a nice, out-of-the-way Italian restaurant in San Pedro, but their online menu doesn't list even the (veal) entree. They do make sandwiches at lunch from chicken or eggplant parm.
