My post may be too late if you are trying to have something made up and can be kept refrigerated for a day but try Juniors on Westwood Blvd. http://www.jrsdeli.com/ If you are trying to find a place that would be open that serves "Jewish Deli", sorry. I would then tell you to go to Trader Toes and make up your own platters.

Barney Greengrass - in Beverly Hills. I'm pretty sure you can order platters, not cheap tho. Bagel Brokers has the best bagels and white fish salad, not sure if they have herring. They cater as well.

I was at Greengrass today. If you didn't already place an order the pickings are slim. Also, they're only open tomorrow (Sunday) until 3pm, and then closed through Yom Kipur.

I don't know if you want to make the drive, but Brent's Deli in Northridge (the best in LA in my opinion) is open on Monday the 28th for catering only from 4pm to 6pm for the holiday.

Strikes me that driving to Northridge and back to the Westside at rush hour while fasting might be a little stressful. Juniors isn't brilliant, but it is a traditional and well-stocked Jewish deli on the westside.
