Leftover canned chipotles in Adobo Sauce?

Angelina Sep 24, 2009 11:11 AM

I made an amazing pork tenderloin the other day using these canned babies. I never cook anything else with them, but I have quite a bit leftover. Any suggestions?

I asked the same question a while ago, and got some great responses: http://chowhound.chow.com/topics/575384

I just put the stuff from the can in the food processor, and have kept in a plastic bag in the fridge for use whenever necessary--it seems to keep forever.

care to share the pork tenderloin recipe?

oooh..Thanks! Yes, I can share the recipe once I get home! I will gladly post it!

Just so you know, it was basically white wine, garlic and shallots sauteed, cream (calls for heavy I used light) and the canned chipotle peppers...SOOOOO GOOD! I will post all measurements later!

I had heard they last forever, but the last batch I put in the fridge got all moldy pretty quickly. Well it could have been a month or so, I don't use as much as some people. So now I keep in the freezer, where it will last forever (if necessary).

I whip up a can of chipoles and the adobo sauce in my food processor and keep it in a jar in my fridge. It's one of my favorite condiments -- add a spoonful to mayo or ketchup, add some to a stew or other braise, etc.

And it does seem to keep forever -- the ley is the vinegar in the adobo sauce.

I dump the whole can--sauce & all-in a ziploc bag & put it in the freezer. It's real easy to just break off a little corner whenever I want & they defrost really quickly.

These are truely worth their weight in gold in London, so we put leftovers in a jar and in the fridge.

Best sandwich ever, spread a little pureed chipotle on sourdough bread, with sliced turkey breast and muenster cheese, and grilled. Fantastic.

                Hi,
I freeze the left over chipotles in Ice Cube trays so I can take out what I want individually with a little sauce, works great and lasts forever.
