The BBC one works well. The only place I would disagree is the cooking method. I prefer a pizza stone, heated to as high as the oven can go for half an hour. And watch them carefully. Make enough dough to allow for burning your test one. For a 'non-authentic' version you can change the pistachio to macadamia or cashews - or any other nut you fancy with the exception of chestnuts.
