Stuffed Grape Leaves
Dolma, yaprak salma, whatever you want to call them. Remember the discussion sometime back about the "dolma machine" that stuffs and rolls the dolma for you? Well, I put my name on the waiting list for one waaaaay back then at Nouri's Middle Eastern Bakery in New Jersey. They were on order from Egypt, and they had no idea when they'd come in, but they were sure they would arrive eventually. Well, this morning I got a phone call from George, a wonderful guy at Nouri's, and they just arrived. Mine is being shipped as I write. BUT....! They only recieved a grand total of 25, so if you're one of the folks who wants one, the iron is hot and now's the time! The machine is $25.00 and for me, shipping to the Dallas area was $15.00, so for forty bucks we will have dolma for Christmas! YAY! I just hope the machine is as easy to use at it looks in the on-line videos!
The biggest benefit of the rolling machine is that the final product will be quite uniform in length. Have you made them by hand? I think I could do it faster by hand than using the machine. If you buy brined leaves in a jar or can the leaves will vary in size. I don't worry about the length but do like to make sure they are of even thickness and uniform in diameter.

My extended family gets together and rolls a few hundred a couple of times a year for holiday meals. I'm not sure but I think these are mulberry not grape leaves from the length. Although sometimes we get some big grape leaves

Yes, the machine makes them very uniform in length and size, and maybe a bit less than half the length of those in your picture. I have never seen dolma that long before! I've always rolled mine by hand, which has meant I've always been very generous with how many brined (and desalinized) leaves I've used in the bottom of the pot. I've always rolled them alone, with no one to chat with while doing it, so anything to reduce the time! But I greatly prefer fresh grape leaves, so with the machine (and a huge back yard) I may get around to planting a grape vine. Oh, wait! I didn't think of it before, but there's a small vintner just up the road.... Maybe..... '-)
I also plan on testing it for rolling phyllo. It would be great to have machine made sigara burek! Happy times....!!! +

Ours are served hot as a main part of the meal. Yeah we are in Tampa Bay, Cigar City, so a corona or achurchill size is appropriate. In fact we always grew up calling them cigars and still do.
