I've never made ice cream, and I have some very ripe peaches....so.....I've been searching the internet for ice cream recipes and have found recipes that call for everything from peach jello (is there really such a thing) to sour cream. I love peach ice cream -- slightly chunky. I can borrow a friend's ice cream maker. Does someone have a good basic recipe that involves sugar, cream, peaches and not much else (although since I've never made ice cream, maybe there are other essential ingredients)? As I understand it, there will be cooking involved. I'm not looking for a science project, just dessert. Thanks.

Hello! It does depend on the size of your ice cream maker, but my base ice cream is:
- 1 c. whole milk
- 2 c. cream
- 3/4 c. sugar
- splash vanilla
- handful of whatever I'm adding, thrown in towards the end.

I'm very liberal about using half and half, 2%... whatever's in the fridge. Obviously, the more fat, the better.... but I'm usually satisfied with anything.

If I have the time, and I want a really whiz-bang product, I use a few eggs (I whip the sugar with a couple of eggs, warm the milk/cream, slowly add a cup of the warm cream to the eggs, then mix all together on the stove top til heated through. Refrigerate until cold, turn into ice cream.)

Good luck!

Thanks. Do you use the entire egg or just the yolks?

I use the whole eggs. I think my original recipe for "premium" ice cream called for 2 eggs and 2 yolks. I can never be bothered to find a use for 2 whites, so I just add two or three whole eggs. I try not to overcook and turn into pudding- though recently did that with a chocolate ice cream, and it was the best we'd ever made, so maybe that's the way to go!

I haven't made ice cream in years because there's rarely enough room in my freezer to chill the insert for my Donvier hand-cranking IC maker. Recipes that came with it do not require cooking - that's only needed if you use eggs or need to melt ingredients. I used to make fresh fruit ice cream with just light cream, sugar, and chopped fruit. I macerated the fruit with the sugar first, to dissolve the crystals. Taste the mixture first - sometimes it's necessary to blend in some preserves/jam to punch up the fruit flavor.

Yes, there IS peach jello. There is also peach schnapps, from which you can boil out the alcohol before adding to the IC recipe to intensify the peachiness. You can leave the alchohol in, but the IC won't freeze as hard.

Right- I never cook unless I'm using eggs. I should have said.
