Best places for Taiwanese A) Cold Noodles and B) Eel Noodles?

Since being back from Taiwan, there are 2 dishes that I miss tremendously: Liang Mian (sesame, julienned vegetables with a vinegary sauce mixed in) and a famous dish from southern Taiwan (Tainan) called Eel Noodles.

Liang mian seems like such a simple dish – even the packaged ones I'd get from the convenient stores there were amazing. Tried them at Asian Legends, but wasn't very good - sesame sauce too thick, not enough vinegar.

HELP!
