Boston Butt Question

going to make pulled pork in a few days and I have a boneless Boston Butt thats a little over 7lbs. I know I want to cook it low and slow but a 7lb roast is going to take a really long time to cook properly.

Can I cut the roast in half, cook both halves at the same time and cut the cooking time down a bit? Any reason not to do so? Thanks.
