We are planning a bridesmaids brunch that is going to be a trolley ride. We are providing boxed lunches and were trying to figure out an easy way to serve some type of champagne cocktail (preferably mimosas). I was wondering if any folks out there know of a good cocktail that is individually bottled? Thanks in advance.

Why not do a champagne cocktail? Buy individual bottles or cans of champagne, bring a plastic container of sugar cubes, douse them with bitters and hand them out.

POP from Champagne Pommery (France), in cool little blue bottles. My recommendation.
Both regular and Rosé.

Sofia "Mini" sparkling wine, from Niebaum-Coppola, in pink cans. Blanc de Blancs.

These would work without making a cocktail, and are easily packed into boxed lunches
just before they're passed out (keep chilled beforehand).

These aren't my favorite bubblies, but may work very well for your needs.

Nicolas Feuillatte is my favorite maker of splits. They have a Rosé and a Brut. They're both solid, particularly the Rosé.
