I will be in these places on my own, during the first week of October. I am a professional cook and love all food and drink. Any recommendations for both in the region, including stores, markets, bars, tapas and restaurants, would be greatly appreciated! Thanks for any response.

For Madrid and Seville, search this board as there are tons of earlier posts. Madrid has just about every conceivable types of restaurants. If you can be more specific what you are looking for: budget, ambience, type of food, etc, you'll probably get some good recommendations. As for Seville, it is mostly about tapas places which has been covered in many recent posts.
