"Please bring my bones dry"

Which BBQ joint has ribs (either pork or beef) that can stand on their own?

Dry.

No sauce.

Just the smoky goodness for the 'Que.

Baby Blues for kick-ass-drop-you-where-you-stand-choke-the-proverbial-horse-sized beef ribs. Definitely, fit t'eat and possibly the biggest, meatiest beef ribs I've had in town.

BigMista easily has the best ribs, no sauce. Heck, best ribs period. No beef ribs though.

I've only tried Neil's brisket "off the fat end" (which was fantastic, by the way).

Ribs maybe in the future ...

Definitely Big Mista's. They pack them dry and put the sauce on the side. $18 for a full untrimmed rack. I just use a little sauce otherwise they stand up on their own dry.
