Chicken Marbella question
I am thinking of making chicken marbella (from the Silver Palate cookbook). The recipe calls for white wine, but I have an almost- full bottle of vermouth which I had bought for another recipe. Can I use the vermouth instead of white wine in the chicken marbella recipe?
People on this board said I could use vermouth in any recipe that calls for white wine. Would it REALLY work in the chicken marbella?
The vermouth would be absolutely perfect for Chicken Marbella. I have also made it with red wine (no gasping - think coq au vin) and on one occasion, a bottle of beer that I'd opened to make CI's ALmost No-Knead Bread. All are delicious - CM has lots of bold flavors so the wine is just a background note.
