        <content>While having the tasting menu at Rouge around a year ago, we had foie gras 3-ways with this delicious drizzle of sauce. They said the sauce was made from scrapings of a sherry cask. There was a name for the sauce, but I can't seem to recall it. Anyone else happen to know what the name is?</content>
