What to do with lamb liver?

I purchased a whole lamb for the freezer, and I only have the liver left. Any recommendations?

    -fry some cruttons till brown and lightly season. soak in red wine and balsamic vinegar
    -wiz liver and soaked cruttons in cuisinart with button mushrooms, mint, thyme.
    -line bread pan with thinly sliced canadian bacon, pour in liver and bread mixture.
    -cook in ban marie in a low oven for 1 hour, serve with mint jelly and fresh thyme over warm sour dough.

      Boil till done. It doesnt take too long. After cooling, slice into matchsticks. In a blender mix yogurt, cilantro, garlic and cumin seeds with salt. Add the cooled matchsticks to this and enjoy as a side.

        Thinly slice and quickly fry. Have with mashed spuds and onion gravy. Classic and delicious.
