Yikes-Help with a menu with dietary constraints!

I need to cook a meal for 10 people next Sunday. Non-adventurous eaters. Prefer simple prepartion due to time constraints. Also would like to spend under 60.00. Have a well stocked pantry. Here are the issues!

1 person does not eat chicken or poultry.

1 person with CHF (congestive heart failure) so low fat and low sodium

2 people with diabetes so no sugar/lower carb

1 child 4 years old

Ideas????????

  1. homemade veggie soup, hummus w/pita or crudite, skewers of fish w/vegetables, greek salad, fresh fruit, maybe some lowfat frozen yogurt or ice-cream.

    1. How about salmon? You can poach a couple of sides, available at Costco, cover with thinly sliced hothouse cukes, and serve with a dill and caper sauce made with non-fat yogurt. Or, bake individual servings, and serve with the same type of sauce. It will fit in with every dietary need you listed and can be done for under $60, including sides and dessert. Something light, like angel food cake with fresh berries would be lovely to end the meal. Not the most exciting menu, but you said they were non-adventurous eaters.
