Crustless mini cheesecakes?

I want to make cupcake sized cheesecakes so I can put different toppings on each one and so I so I can make at least some without a crust (for someone allergic to gluten).

Can I do this by following a regular cheesecake recipe and just pour the batter into cupcake cups in a muffin pan? Do I need a different recipe for the ones without crust?

  1. Yes... you can use a regular cheesecake recipe. Just remember to adjust cooking time by about half and bake the crustless ones in a separate muffin tin. And be sure to use the paper muffin liners to expedite the removal!
