No-bake cheesecake WITHOUT cream or whipped topping

Hi there Chow-people!

I'm looking for a recipe from back in the 60s my Mom used to make. It was a VERY simple cherry-cheesecake recipe, a no-bake one with just a few ingredients, primarily cream cheese, lemon juice, vanilla and icing sugar. Can't remember if there was anything else. It was the first cheesecake I ever had, one of Philly Cream Cheese's first no-bake recipes, and Cool Whip topping wasn't even invented then. And I know there was no whipping cream in it. Can anybody out there help me out??

  1. Can't find what you are looking for, but read that Cool Whip was introduced in 66 or 67- Are you sure it wasn't in there?

Oh yeah, I'm sure. We were in northern New Brunswick at the time, and never heard of it!

    2. if there was no cream or whipped topping, my guess is that it was a recipe that calls for either sweetened condensed milk or gelatin. is that possible?

      1. Years ago, I made these little cheese cake cookies, Merry Cherry Cheese cake cookies, that weren't baked. The filling was probably this; Cream Cheese, sugar, orange peel, orange juice, (or lemon) light cream and the fruit you added was in this case chopped marachino cherries and topped with the cherries sliced in half. The crust was vanilla wafers. Sound close?

        1. ok, i've been obsessing about this one today while running errands - i really think that even if the recipe didn't contain Cool Whip, there must have been some heavy whipping cream in there. most of the pre-Cool Whip recipes for no-bake cherry cheesecake filling contained cream cheese, sugar (in this case powdered), heavy whipping cream, cherry pie filling, vanilla extract and lemon juice.

In my part of the country, there's something called vinegar pie that has no cream cheese. It tastes as if it did. It, too, goes back to way before cool whip.

          2. My mom makes this one, and my kids help me make it now!

            2 pkgs cream cheese, softened
            1/4 cup lemon juice
            1/2-1 cup sugar, to taste

Mix all ingredeints with an electric mixer until smooth. Pour into a graham cracker crust and chill at least 4 hours or until set. You can top it with cherry pie filling you'd like to have a cherry cheese pie.

Sorry, I got 2 different recipes confused. It's 2 packages cream cheese, 1/4 cup lemon juice and 1 can sweetened condensed milk. Mix until smooth, pour into crust, and chill.

            2. I googled and found one with sour cream and evap milk but no whipped/heavy or canned cream ....no bake

              1. I think it had Dream Whip. I'm not sure if that still exists. It was a powder (packets in a box) that you beat into milk to make a stable whipped topping. God knows what was in it.

Achhh I am old enough to remember Dream Whip and that scares me

                2. I work summers as a registered Maine ocean kayak guide. I take people on 3 day kayak trips on The Maine Island Trail. Although I never cook it at home, please get ready, I'll cook for dessert, Jello no bake cheese cake, BUT I substitute yogurt for sour cream and a fresh strawberry or blueberry topping. After a day of paddling, eating it on a beautiful isolated island at sunset, tastes purtty damn good.

                  1. could it be this

                    16 ounces cream cheese ([2])
                    8 ounce packages, 0.45 kg)

                      please clarify sweetened condensed milk
1 1/4 oz or 1 CAN (of 14 can oz) plus 1/4 oz

                      1. re: nascar

just in case you don't hear back from adiaz since this thread is a year old, my *guess* is that it should be one 14-oz can and the 14 was erroneously converted into a fraction.

                        1. re: goodhealthgourmet

THANKS for the clarification. Now that makes alot more sense. I questioned the receipe, but I really questioned it when I tasted (last night) ` not at all sweet. Thanks again for your immediate response and getting me out of a "jam".

happy to help! hope the next attempt turns out better :)

                    2. I have one that DOES NOT USE COOL WHIP>>>>>
2 - 8 oz cream cheese, 1/3 C lemon juice, 1 can Eagle brand sweetened condensed milk.
Beat cream cheese, add lemon juice and condensed milk. Pour into pre-made graham cracker crust (or you can put in cup cake pan with Nilla waffer cookies in bottom of cupcake paper...add filling) and chill 3 hours.

                      1. Ok It is Easy Peasy , It's a Mormon favorite :) You take a pack of jello your choice flavour and substitute the cold water with Evaporated Canned Milk not 2% or skim all the fat and the hot part as is with water, lol. Mix with Hand Beater or Electris nowadays pour into Graham Crust top with complimenting fruit when half set ,stick in frig and later my Grandma topped with Cool Whip

                        1. Dream Whip is what my mom used for a somewhat similar recipe.

                          1. This recipe is the one my Mom always used. Every time my brother came home from college, she had to make one of these for him; he loved this "pie."

                            Cherry Cheese Pie

1 8-ounce package cream cheese, softened
1 14-ounce can sweetened condensed milk (Eagle Brand is what Mom always used)
                            1/3 cup lemon juice
                            1 teaspoon vanilla extract
1 8- or 9-inch baked pie shell or graham cracker crumb crust
1 21-ounce can cherry pie filling, chilled

In large bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice and vanilla.

Pour into crust; chill 4 hours or until set. Top with desired amount of cherry pie filling before serving. Store leftovers covered in refrigerator.
