        <content>I am seeing professional cooks on tv covering dishes under plastic wrap and then foil on top of that in the oven. It keeps the moisture in the food.  Can I use regular plastic wrap or do they use something special?</content>

      <content>Foil alone should keep moisture in food - I suspect the plastic layer is in cases where acid foods like tomato might react with the foil. Saran Wrap can be used - Jacques Pepin did that to make a sausage without casing. Rolled tightly in the plastic wrap, then in foil and simmered to cook.  Saran also makes a wrap labeled as microwaveable but whether the difference is content or just labeling, I dunno.  Reynolds and other big-name plastic wraps may also be labeled thus,  

Martha Stewart has a bugaboo about foil, and always covers food in something else, then the foil, so it never touches the food.  Of course, Martha would never be seen with a foil pie pan or roasting pan!  </content>
