Fresh Goggonzola and Walnut Stuffed Tortellini

I picked some of this up at the store last night and want to serve it for dinner tonight but am at a loss about what to serve with it - what kind of "sauce" and main dish - I will be making an arugula salad as well. Any thoughts?

    Ended up making a light butter/garlic/parm sauce for the pasta, arugula salad with a simply lemon/evoo vinaigrette topped with shaved parm and chicken milanese - great dinner thanks for all the advice!

      mmmm all sound good, I will definitely do a light sauce (brown butter) and possibly another green vegetable but I think my SO will definitely want some meat/chicken

        in that case, i'd do a simple roast chicken. there's so much going on with the flavors in the pasta that i personally wouldn't want anything complicated.

          Agree with ghg on the chicken roasted as well. Even roasted parts with a lemon to keep flavors clean & fresh.

        i agree with HillJ. the filling is rich and tortellini are heavy as-is, so i'd consider serving it as a main course. and sauteing in browned butter would enhance the nutty flavor without adding unnecessary heft to the dish.

        the peppery bite of the arugula with a nice sharp acidic vinaigrette will balance the richness of the tortellini beautifully. if anything, i'd just add another green vegetable, maybe grilled asparagus or roasted green beans, and serve it as a side with the pasta as the main.

          Agreed, I serve this with a browned butter and fried sage leaves sauce.

          How about an olive oil, garlic, and lemon zest type of sauce. What about roasting some good Italian sausage to serve along side. Marinated and roasted chicken breast are always delicious. You could use the olive oil, garlic, lemon sauce above as the marinated and then cook it up for the sauce to go on the Tortellini.

            Lightly saute in brown butter but to be honest I would top the arugula salad with the tortellini of that caliber and call it dinner :)
